The smelling of fuel is an important clue.

On my 97 4.3L there is a fuel pressure regulator under the intake
plennum. The diaghrphram ruptured and I could smell fuel, truck would
run rough but restart. While this is not common, it does happen. They
were able to fund it with a pressure tester. The repair was as I
recall several hundred. But this is only a guess.

Actually it is sadly common to have a failure of the CFI "spider", and
it is a bit expensive to replace.

what about water in the gas tank? or the gas cap isn't letting air in.
