Default Chevy Malibu Overheats Fast? Water Pump? Thermostat?

Howdy last week we noticed our 2002 chevy malibu (with the famous crapy
3.1 engine) was leakng coolant we couldent figure out where. after some
research online i figured our manifold gasket was bad as so many other
out there i tore down the motor and replaced the gasket which was in
fact all torn up at the water ports and reassembled everything i
flushed the moter and the cooling system with products from the parts
mart and now the car seems to run fine now but at some points the car
will just almost instantly go to the red limit and the hot light will
come on if i drain a little pressure out of the nipple above the water
pump it will resume back to a normal temp almost just as fast as it
heated up do you think this could be water pump issue or a thermostat
issue. the stat is brand new. i checked anfd there is no oil in the
water and no water in the oil any help would be a great help. there is
no way i could afford to take it to a dealer. thanks

3.1 isnt a 'crappy engine' per say. the 60 degree configuration has proven
to be an iron horse of an engine with a thorn in its hoof (int.,man.
gskts)........having dpne many a dozen leakers in the past yrs., most
resently = yesterday, i imagine you are still dealing with trapped air. i
have ran into many that required only refill and one bleed after gasket job
BUT just as many that i babysetted a couple of hours trying to get system
purged......i would discount the water pump but think hard about the
thermo. which should have been replaced when lower manif. was on the
bench.....let us know how it turns out.

thank you for the help i should of stated that the new thermostat was
installed in the rebuild process im not sure if im bleeding it right
but i have put in over 2 gallons of water in im not sure if it is
leaking out or being forced out during the spontanious overheats. could
i have gotten a bad thermo from the parts store? i open the little
nipple over the water pump till water comes out then i run it some more
and repeate is there some other way to purge the air? thanks
