Default McCranie's Red Ribbon and Red Flake?



I have tins of McCranie's Red Ribbon and Red Flake.
They are both from the 1996 crop.
The Flake was tinned in December 2003 and the
Ribbon in February 2003.
I find the Ribbon to be very smooth and the Flake
much rougher and tangier.
Is the difference caused by the extra 10 months in the tin?
Will the flake mellow out if I age it another year?

Default McCranie's Red Ribbon and Red Flake?



I had a similar experience with this newer batch of the Red
Ribbon/Flake, which surprised me. I expected that, if anything, the
flake would be better/more mature but found the opposite to be the
case. However, if you allow the flake to age in the unopened tin for a
year or more it will mellow into an amazing, smooth, flavorful smoke.
