I want to develop a resume/portfolio in illustrator and save it as a PDF. I don't understand how to develop a multiple page file. Illustrator is just one 8.5 x 11 and only gives one page in PDF format.

Illustrator can only handle one page at a time. If you want to make a multiple page document from Illustrator, you need to also have the full version of Acrobat, which will be able to "stitch" the multiple pages together into one .pdf.
