Texas style barbecue sauce question
I'm going to be hosting a large gathering next spring and plan on
smoking quite a few pork butts. I can make sauces for them without
any trouble. Lots of eastern style barbecue experience to be had in
eastern Tennessee.
The unfamiliar territory is this - I'm also going to be smoking at
least on beef brisket for the native Texan in the group of attendees.
He's now living in Bethesda, Maryland, so it's doubtful that he gets
good barbecue the way he likes it. I've told him I'll try, but I
can't make any promises. It's hard to duplicate something I've never
eaten. The last time I was in Texas, I was probably 12 years old and
didn't appreciate good food as much as I do now. (Probably why I was
a skinny kid, and now a slightly plumper adult, eh?)
Anywhoo... he mentioned that his favorite sauce is no longer
available. It was called Bad News, and he would dilute it with V-8
juice. Does anybody have a recipe that will come close to this sauce?
BTW, he also sent me a turkey recipe, complete with sanitary cleanup
instructions. He works as a food inspector for the USDA. Think I
might be doing some more pulled pork and a turkey or two this weekend.
Any help will be appreciated.
