Hi Harvey. That seems like a lot of honey to me. What, 3 or four loaves?
Surely they'd still taste quite sweet as the yeast wouldn't have a chance to
reduce the fructose into CO2 and ethanol, leaving a large percentage of the
honey (50%+) as honey/fructose...

Well, all I can say is they taste pretty good. Still, I have started
making lean breads of late and next time a make this - probably soon - I
may very well cut back on the honey.
