Default Why do cakes crack on top?


Hello again

I hid this question in a previous posting about my Nigella christmas
cake, but as nobody picked it up I'm giving it a posting all of it's
own!

What causes cakes to crack on top and how can you stop it happening?

Top gets cooked/hard too quickly, cake is still rising underneath.

If it's something like a fruitcake cover the top with a disc of
greaseproof for the first half of the cooking time.

On a 7" round, rich fruit cake, total cooking time of 2 hours, we cover the
top with foil for the first 1 hr 15 mins.

I don't want to stop it; it's often lovely and crunchy and tasty.

Just seen this. Try wrapping the outside of the cake tin with two
layers of brown papers and tie it up with string. Cut a disk of
greaseproof, grease and lay on top of cake, covered with a disk of brown
paper. Remove disks half an hour before end of cooking.

PS. Perhaps your cake cracked because of the nuts?
