I would like to add:

Our butcher says his carcases almost always come back from the
abattoir with "kidneys/liver damaged" - or words to that effect (he
has suspicions but can't do anything).

Up until a year or two back he used to slaughter himself - but
legislation did away with a lot of small abattoirs because of the
financial cost of complying.

Shame.
