Default REC: Banana-Lemon-Ginger Chutney



This is from _Salsas, Sambals, Chutneys & Chowchows_, by Chris Schlesinger
and John Willoughby.

"This chutney, in the East African tradition, features the bananas and
aromatic spices central to the cooking of that region. It is best to use
bananas that are just slightly underripe, since they keep their shape
better. But don't use really green ones or you will end up with a bitter,
chalky chutney."

"This is particularly good with roasted or grilled game, such as rabbit,
duck or quail."

1 tablespoon peanut oil
1 onion, thinly sliced
1 tablespoon minced fresh ginger
4 almost-ripe bananas, cut into 1-inch-thick rounds
1/2 cup brown sugar
1/4 cup fresh lemon juice (about 1 lemon)
1/4 cup red wine vinegar
1/4 cup orange juice
Pinch each of ground mace, ground nutmeg, ground cloves, and ground cinnamon
Salt and freshly-ground black pepper to taste

In a large sauté pan heat the peanut oil over high heat until hot but not
smoking. Add the onion slices and sauté, stirring occasionally, until
translucent, about 5 to 6 minutes. Lower the heat to medium, add the
ginger, and sauté an additional 1 minute. Add all the remaining ingredients,
bring to a simmer, reduce heat to low, and cook until the liquid is about as
thick as catsup, about 10 to 15 minutes.

This chutney will keep, covered and refrigerated, about 2 weeks.


BOB'S NOTES:

1. I think this matches well with ham, pork, or any Caribbean chicken dish.
It's also good alongside black beans and rice. I haven't tried it with the
recommended rabbit, duck, or quail.

2. Sometimes I add a quarter-cup of coconut milk and/or a spoonful of chunky
peanut butter, especially if I'm making satay.

3. If you do have extremely green bananas, you can come up with a passable
dish by cutting them into half-inch dice and cooking them with the onions in
the oil before proceeding as in the rest of the recipe. Expect to use about
twice as much oil, though. The resulting dish won't be all that close to
the chutney made with riper bananas, but it's good with scrambled eggs and
ham.

I don't know about bob, but David is really skinny, I could probably juggle
him easily.

Thanks, I forgot my larger SD card for my camera but I still managed over 100
photos. It was a beautiful trip and it even made up for the fact that we
didn't go to the BWCA.
