Red Onion Potato Salad


Servings: 6 servings.


What you need:


Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
6 medium potatoes -- white or red (about 3 and 3/4 lb)
-- peeled cooked and sliced
1 cup sliced celery
1 cup thinly sliced red onion
1/3 cup chopped parsley
1/4 cup low-calorie italian dressing
3 tablespoons wine vinegar
1/2 teaspoon salt
1 dash cayenne pepper


Ready, set, cook!


1. Cook potatoes and slice.

2. In a large bowl, combine the still-hot cooked potatoes with the
remaining
ingredients. This will allow the potatoes to marinate in the
dressing.

3. Refrigerate the mixture for several hours or overnight, so that it
chills
as it marinates. (Chilling the hot potatoes while they marinate
brings out
their full flavor.)

4. Serve cold.

Nutritional Information:

102 Calories (kcal); trace Total Fat; (1% calories from fat); 3g
Protein;
23g Carbohydrate; 0mg Cholesterol; 204mg Sodium
