Roasted Pears and Sweet Potatoes
Sweet Potatoes Baked with Pears and Cauliflower From: "Linda Holbrook" <lindaholbrook_ny@tva.ca> I understand that roasting sweet potatoes with pears makes for a delectable dish. Has anyone ever heard of this? Any recipes appreciated. Roasted Pears and Sweet Potatoes Serves 4; Prep time: 15 minutes; Total time: 45 minutes 2 sweet potatoes, sliced 1 1/2 inches thick 3 tablespoons olive oil 1 teaspoon dry mustard 1/2 teaspoon ground ginger 1/4 teaspoon cayenne Coarse salt 2 Bartlett pears, cored, quartered, and halved Preheat oven to 400°. Scrub 2 sweet potatoes. Quarter lengthwise; slice diagonally 1 1/2 inches thick. On a rimmed baking sheet, toss slices with 2 tablespoons olive oil, 1 teaspoon dry mustard, 1/2 teaspoon ground ginger, and 1/4 teaspoon cayenne; season with coarse salt. Roast, tossing occasionally, until crisp-tender, 20 to 25 minutes. Core and quarter 2 Bartlett pears; halve crosswise. Add to the potatoes; toss all with another tablespoon oil. Continue roasting until potatoes are fork-tender, about 10 minutes more. Sweet Potatoes Baked with Pears and Cauliflower This great recipe features roasted sweet potatoes, cauliflower and Asian pears in special herbs - great with roasted or barbecued meats and poultry. Serves 4 1 lb. sweet potatoes, cut into 1/2 inch thick rounds 2 cups cauliflower florets 1 1/2 cup Asian pears, peeled, cored and cut into thick wedges 1 Tbsp. sunflower oil 1 garlic clove, crushed 1 tsp. fresh chervil, chopped 1 tsp. fresh chives, chopped Preheat oven to 400 F (200 C). Combine oil, garlic, chervil and chives. Season according to taste. Add sweet potatoes, cauliflower and Asian pears. Coat well. Bake in a non-stick pan for 1 hour until sweet potatoes are soft and browned. Serve hot as an accompaniment to roasted or barbecued meats and poultry.
