Salmon Casserole
Salmon Casserole
Recipe by Traci Poole.
1 (15 1/2 ounce) can of salmon
8 slices of bread
1 pkg of frozen spinach, chopped
1/2 lb sharp cheddar cheese, shredded
4 beaten eggs
2 1/ c milk
1 Tbsp onion, chopped
1/4 tsp dry mustard
Drain salmon and save the juice. Remove the crusts from the bread.
Thaw and drain the spinach. Add to teh eggs, milk, onion, mustard, adn
the juice of the salmon. Grease the casserole dish. Add 4 slices of
bread tot eh bottom of the dish. Then in this order, layer the
following, : 1/3 cheese, 1/3 salmon, and then the spinach. Repeat
again. Once this is done, pour the liquid mixture over the top. Bake
for 1 hour at 325*.
It is highly recommended that you prepare this 1 day ahead before
baking.
