Default Sourdough breads



When I was living in CT, the local bakery made a Sourdough Rye bread.

Now that I have moved, I cannot find a place that makes one.

Does anyone know a place in Central Mass or near downtown Boston that makes one?

The OP might try the When Pigs Fly New York Rye. (mit seeds) it is quite
acceptable, even by the standards of DH.

Maybe that's laughing gas leaking out of your furnace. Anyway in the '50s
and '60s my family would get this great rye bread that we called "corn bread"
from Gus & Paul's in Springfield, Mass. It had nothing to do with maize --
it was a moist, chewy rye bread with a thin hard crust. Does this go by
another name? Can I find this in Massachusetts?

Corn (the word _corn_, that is) is a cognate of _grain_ and just means
the whole kernel of whatever the locally prevalent grain crop is. So it
means maize in North America, but it means rye in Eastern Europe (and
barley in Scotland, and so forth).

So corn rye is a whole rye bread--that is, a pumpernickel but without
the added coloring that we Americans have come to associate with
pumpernickel.

There used to be a bakery in Sharon that made it (a place called Cake
Art, IIRC, that had to-die-for desserts but also made a killer corn
rye). They're out of business, though.

The classic corn rye as well as the best raisin pumpernickel in the
world is available from Cohen's, in Ellenville NY
(http://cohensbakery.com/s/index.php?cPath=21). Warning: the site ****s.
However the prices are extremely low (I have no idea what they charge
for shipping, but the breads cost half of what you'd pay in
Connecticut). I think you might have better luck calling them rather
than ordering through the site.

The rye they have pictured on the site is a standard loaf, and I can't
tell if it's white rye, medium rye, or corn rye. They used to make (and
may yet) a four pound round corn rye. It's worth a phone call to find
out if their standard rye bread is the same dough or is a white rye.

To the best of my knowledge, there is no corn rye available retail in
Massachusetts. However, you can certainly check out Cheryl's suggestion.
The last time I tried any When Pigs Fly bread, it was pretty bad, but
that was about seven years ago and it may well have improved.

Gus & Paul's is still going strong in Springfield, by the way. There is
also a Rein's deli in West Springfield now.

That's nasty. But if you ordered four loaves and still had to pay $10
for shipping, then froze three (or went in on the deal with your
neighbors)...

Have some in the kitchen right now. Good, but not close.

Their "outlet" store is nice to visit as well.

It's on Rt 1, about 1 mile north of all the stores in Kittery.

And, just another few miles up the road is the Stonewall Kitchen mother store.

i have some interesting news regarding rein's. a few months ago they
opened a branch in west springfield at the intersection of 5 and 20. we
ate there a couple of times when we were at the big E. seems to be the
same quality but with a shorter menu. it is owned 50/50 by rein's and
the local owner (we met him) who has some other restaurants in the area.

so this one is a little closer to boston (actually i can get to the I84
rein's in 90 minutes and i think this one would be about the same).
