Sweet Potato Salad

3 large sweet potatoes
1/3 cup fresh squeezed lime juice
2 sweet apples
1 cup mayonnaise
1 cup chopped coarse cashews
1 cup thin sliced celery

Cook potatoes till done. Cool and peel. Cube and sprinkle with lime
juice..Add peeled and sliced
apples, celery and nuts. Stir in mayo. Season to taste with a bit of salt
and sugar if desired. Serves
8 to 10.
