Deterioration of the ground coffee (in the store or
if you store it at home) may partially account for
not being able to recreate the same good coffee
experience twice. I have the same problem.
Water temperature could cause some differences...
and even fluctuations in how you perceive the same
coffee brew. It's more than just applied chemistry...
Brewing excellent coffee is an Art!

Probably, immediate freeze, though I haven't tried that.
Must be well sealed. I have only tried freezing green beans.
Still prefer not freezing. You could experiment with small
batches.

After roasting, or thawing the beans should be allowed to
age for a couple of days in a leaky container.
I use a bottle with the cap loose. Lots of chemistry going
on! Any roasting is extreme violence. Immediate use tends to
taste raw to me.

Of course, grind just before extraction.

I think it is more than just the caffeine.

I prefer espresso after it has totally cooled,
even aged an hour.
The extraction to Americano is with very hot
water. (An old commercial espresso machine
that cost $800 20 years ago.)

I have tried tea in the Americano with very mixed
results. I don't do that anymore.
