I would like to add:

Hello Wojtek.

The pickles are usually used as a condiment - small amount on the
side.

One of our local restaurants does use this sort of pickle to make a
curry dish Achari Gosht(Lamb) but I have not tried to make it myself.

Local here also uses achar in chicken curries; nicely sharp /spicy I
thought ... (I'm sure I've had lamb, too)

Good luck with it!

They appeared to just stir in a spoonful near the end of the cooking; it
has appeared as a "stripe" through the curry ... so contrasting
flavours, not just "mixed" ...

Claimed as a Bengali thing ...

Post Re: Achar pachranga

Dear Wojtek,

Generally pickles are eaten with any Indian style bread (rotis, chapathis, naans, parathas) and also with rice. Typically, in South India, the last course of the mail meals (lunch and dinner) is curd rice - cooked rice mixed with curds (unflavoured and sometimes unsalted yoghurt). Since this rice preparation is slightly bland, pickles are eaten with it. Just one small spoon of pickle is used as a side dish and a small piece of the vegetable in it is eaten with every mouthful. Do not consume too much, since it may ruin the flavour of the food. Moreover, since it is high in salt, eating excess pickle is not good for health.

I trust this information is sufficient. Enjoy your meals with Achar Pachranga.
