Default another use for your bread

My wife is Russian and she grew up in Ukraine. I can never forget the taste
of good kvass. It's usually made from old rye bread. Here is a link about a
bakery in Toronto that uses it's stale rye to make kvass:

I'm hoping to try my hand as the weather gets warmer. Cold kvass on a hot
day is even better than a cold beer.

Nice article on kvass, but I think they're stretching things a bit with
this comment: "It tastes like beer but is not alcoholic." Less than even
light American beer, but still *some* alcohol there.

My problem is that I never have any stale rye bread around!
