2 Eggplants cut lengthways into 1cm thick slices
1kg Lamb or beef mince
1/2 cup dried breadcrumbs
2 cloves of garlic
1 cup of water
1/2 cup tomato paste
salt and pepper to taste
Serve with rice or cous cous
pre heat oven to 180.c. Drizzle eggplant with oil and salt, grill on both
sides til golden brown. Remove from grill and cool. Add mince,
breadcrumbs, garlic, salt and pepper to bowl and mix. Make small mounds in
hands to resemble cylinder shaped meat ball. Eggplant slice to wrap around
mince mound, repeat until all eggplant slices used. Place all wrapped
mince rolls in a medium baking dish. Combine tomato paste and water and
pour over eggplant wraps. Cover with foil and bake in oven for approx. 1
hour or until tender. Serve with cous cous or rice.. umm beautiful.
