Mini Vegetable Lumpia with Garlic-Vinegar Dip

Mini Vegetable Lumpia with Garlic-Vinegar Dip

2 Tbsp. olive oil
3 cloves garlic, finely chopped
1 medium-sized onion, finely chopped
1/2 cup green beans, finely sliced
1/2 cup carrots, finely chopped
1/2 cup celery, finely chopped
1 cup bean sprouts
Pepper to taste
Soy sauce to taste
1 tsp. sesame oil
Mini spring roll wrappers
3 Tbsp. water
Oil for frying

In a pan, heat oil medium-hot then add garlic. When garlic
is slightly brown, add onions then stir-fry the vegetables
until almost done. Season with pepper, soy sauce and sesame
oil. Set aside, draining excess liquid. Separate mini spring
roll wrappers and cover with damp cloth. Take one wrapper at
a time, laying each wrapper on a plate. Place a tablespoon
of vegetables on the wrapper, and wrap vegetable mixture
firmly, sealing the edge with a little water. Heat oil in a
deep frying pan on 'hot' stove setting and fry spring rolls
until lightly browned (using a deep fryer is best). Serve
hot with garlic-vinegar dip.

Garlic-Vinegar Dip

3 cloves garlic, finely crushed
1/2 cup vinegar of choice
1/8 tsp. ground pepper
Pinch of salt
1 tsp. shallots, finely chopped
1 chili pepper, chopped (optional)

Mix ingredients in a glass bowl and add more vinegar/pepper/salt
as required.

The Skinny: Since these are fried, just have a couple.

Adobo with Garlic Fried Rice

1 kilo meat (2.2 pounds), cut into chunks (your choice of pork
or chicken)
1 cup vinegar
1 head garlic, crushed
1/2 cup soy sauce
1/2 cup water
1 tsp. peppercorns
1 Tbsp. oil

Wash pork or chicken meat; place in a cooking pan, and mix in
other ingredients. Cover the pan and bring mixture to the boil,
using medium heat. Once boiling, stir mixture to separate meat
pieces. Lower heat, cook until meat is tender, stirring mixture
once or twice. When meat is tender and there is 'excess' liquid
left, transfer meat to a container and allow excess liquid in
the pan to 'evaporate' by turning up the heat. Once liquid is
almost dried up, put back the meat in the pan and allow to
'fry' in its own fat, stirring lightly. Serve hot with
garlic-fried rice and tomato slices.

The Skinny: Use the leanest meat you can find.

Garlic-Fried Rice

4 Tbsp. Olive oil
1 head garlic, crushed finely
4 cups cooked rice, refrigerated overnight
Salt to taste

Place rice in a wide container and separate grains using your
hands. In a non-stick frying pan, heat oil over medium-hot heat
and fry garlic until brown. Add rice and mix thoroughly until
rice is evenly cooked. Season with salt to taste. Serve hot.

The Skinny: Not much room for improvement here.

Green Mango with Tomato Salad

2 firm green mangoes, peeled
4 medium-sized tomatoes, cubed
2 medium-sized onions, finely chopped
Fish sauce to taste
Pepper to taste
2 Tbsp. fresh coriander, finely chopped

Slice mangoes and finely cube flesh. Place in a bowl. Add the rest
of the ingredients and toss lightly. Cover with plastic wrap and
refrigerate until use. Toss before serving.

The Skinny: Again, not much you can do to "skinny" this.

Spring roll wrappers
6 large ripe bananas
Brown sugar
Jackfruit preserves, finely sliced, lengthwise (optional)
Oil for frying

Separate spring roll wrappers and cover with a damp cloth. Peel
bananas, cut in half lengthwise and roll in brown sugar. Place
a piece of banana in a wrapper and place jackfruit pieces (about
two to three) over the length of the banana. Wrap banana firmly,
sealing edges with a little water to secure roll. Deep-fry.

Serve hot.

The Skinny: Use your favorite sugar substitute.
