sometime in the recent past Gerry posted this:

Gerry, on the east coast, soft-shell crabs are generally what we call Blue
Crabs, Callinectes sapidus. What variety are used in Cali?

Probablly the same. They are flown in from the east coast, as I understand it.

They are often shipped around and even saved frozen for off-season
consumption (ever had a "spider roll" at a sushi place in the winter?
Yep, frozen). I'm not aware of any other crab species that is regularly
eaten as "soft shelled crabs" though I won't exclude the possibility of
there being others. --

Just as a note of interest, we asked specifically if they were live and
were told they were.

Great! I definitely think they taste different live versus frozen. Air
freight is one great contribution the human race has made to itself
(unfortunately t comes with pollution, etc). Still..... yummy! --

I see frozen soft shell crabs for sale in the Asian markets. From
China, I suppose. I never saw them live.

Soft shell crabs were listed on the special sign at my favorite Thai
restaurant in Flagstaff yesterday.

I ate raw hard shell crabs in a Korean place in Garden Grove, CA.
