This dish consisted of 2 batches of shoulder “country-style”
ribs. The first batch was cut smaller and baked at 250 degrees
until well done, almost bacon-like.

They were removed when almost crisp.

Bottom layer is sauerkraut, and then the baked
ribs were layered on top.

The main spice will be marjoram, and the next layer
will be LG Rice.

The rice was covered with more kraut, and then
sprinkled with the marjoram.

The 2nd batch of ribs plus grilled sausages are
layered on top of the kraut and marjoram. 2-3
cups of veal broth, black pepperr to taste. A
little garlic powder or minced garlic. A generous
sprinkle of pre-cooked chopped flavoring bacon.
(Optional chopped onion here)

Into the oven for a while, and, in the fullness of
time, it is ready. I cook this by inspection, not time.

Served with sour cream. Rye bread. Beer.
Mustard for those who prefer it to sour cream.
Optional, but not used this time: Chopped onion.
Sour cream can be used to make a finishing sauce,
by blending it into the juices, tempering the cream
first, of course.
Enjoy, after you notify your cardiologists of your
potentially suicidal intent.
Alex, reminding the NG to get their cholesterol
and Lipid panels in order before they eat this.

Thanks, Nick. My Mom’s was better, of course. This ain’t elegant, but
it fills the void. Tonight SWMBO made chicken and rice. As soon as I
finish this Mint Julep, I’m going to dish myself some of it.

Mixed in with the BP was 1 tsp of fresh ground caraway seed.
It goes well, IMHO, with marjoram.

Simple food is sometimes just what the Doctor ordered.
(Although I never knew a Doctor to order *this* particular
Alex, relishing that this pot contained pork in 4 different ways….
(1) Baked almost to jerkey, (2) pork and venison sausage,
(3) pork shoulder baked to juicy tenderness, and (4) smoked
bacon. Oh, but the ‘kraut was happy!
