As I sit here catching up on the group, I’m enjoying a bit of Indian
candy with provolone cheese and Canuckistani “champagne crackers”.
Truly outstanding. I just wish I wasn’t at work, so I could be enjoying
it with a nice dark ale or porter.
Thanks to those who offered interesting suggestions on variations of
this treat. I wound up using a salt, dark brown sugar and maple syrup
brine. Cut the salmon into 1/2″ strips, brined it for 24 hours, then
lit about a dozen coals on my Brinkman smoker. After they burned down I
set up the water pan and added a couple of chunks of cherry to the fire.
(I had been soaking them for several hours.) Let that cook for a couple
of hours and then started a few more coals (well away from the smoker).
Let them burn down and added them to the smoker to renew the heat.
Threw on a couple more pieces of cherry.
Repeated the steps above once more and then after about seven hours
cooking time I took a mixture of honey and Grand Marnier (great idea,
that) and basted the salmon strips with that. Let it cook for about one
hour more and it was done just the way I like it.
Serve at room temperature with bagels or crackers, sliced onion,
cheese, maybe a bit of prosciutto and a good full-bodied ale (a Moose
Drool would be a good choice).

I didn’t know that riverman was to blame for putting pineapple on a pizza.

And you’re welcome to them. Among the many crappy jobs I had back
in my student days was a stint delivering pizzas. I only delivered
two of them that had anchovies, but each time, my car reeked of
them for days.

And there’s the Brit who popularized the Baked Bean Pizza, which could make
your car smell worse than those anchovies.
