You have to select the box with mouse/tab/arrow/control key (depending on what you're playing with and select an item from your existing inventory that is not worn/equipped/enchanted already. So, for example, go find a piece of jewelry somewhere, don't equip it and it will be available in the list when the correct box (item box) is selected. Jewelry is particularly cool to enchant because it weighs virtually nothing, so you can have a ton of enchanted rings, pendants, chains you carry with you a switch a need. For example, I have a pendant that lets me walk around underwated and a ring that gives me night eye that I only where when I need. Just find Azura's shrine. It is way to the northeast all by itself on the map. You can get a marker by hitting the right conversation in Bruma or Cheyindal I think, or just start walking around in the mountains and looking for a statue in the distance. 'nother good alchemy tip.
