I don't think I'm getting messages that are sent with a different
reply-to address. How can I set postfix to accept these messages?
Are there any other settings I might want to tweak from defaults? I
need to be sure I'm receiving all legitimate email since they could be
coming from customers.

Please have always a loog at your /var/log/messages. grep for 'postfix'

You should have set the following things (example values):

inet_interfaces = all
myhostname = hostname.domain.name
mydomain = domain.name
myorigin = $myhostname
mydestination = $myhostname, localhost
mynetworks_style = subnet
mynetworks = 192.168.0.0/24, 127.0.0.0/8, [::1/128]
alias_maps = hash:/etc/mail/aliases
smtpd_helo_restrictions = permit_mynetworks
smtpd_client_restrictions = permit_mynetworks
smtpd_recipient_restrictions = permit_mynetworks, permit_mx_backup,
check_relay_domains

This is an example configuration for a class C (LAN) mailing server.
For a public server it SHOULD be tweaked much more anyway, but since you
provided too less details about your problem, I can you just give a generic
answer.
