Generally, you just boot up from the installation CD for the
new OS and go from there. If you choose to format and install the new system in the partitions where the old system was, the old system will simply be gone. If you choose to install the new system on partitions separate from the old system, and if you set up bootloader configuration to handle both old and new, then you end up with dual boot.
