I have a messy combination of physical harddrives and OS's. The GRUB was
where I want and with the combination of OS's I want?

write a Grub
If GRUB is in the MBR of your first disk, all you have to do is edit
grub/menu.lst, which is a plain old text file. The comments explain the
format and options. In my Ubuntu system, that's /boot/grub/menu.lst.
You'll need to run your editor with sudo to get write access.

OK, but if the present Ubuntu install did not write the Grub, and the OS
that would not boot up, can I create the file with a text editor?
Provided that I would know the synthax, of course.

In short - sure. You might want to print out your current menu.lst and
read up on grub install, etc.
