Default when is ham just ham

My wife has just discovered she has intolerances to wheat, yeast, sugars
(except fructose) and dairy products (cow based).

She loves ham - but virtually all supermarket options seem to have some of
her no-no's included (except parma ham).

Does anyone know, if we get ham from a butcher, is that 100% meat, or is it
likely to have the same sort of additives?

Sorry if this is an idiot level question - we're new to the whole bit of
having to think about what's in food.

I'm highly allergic to commercial cured hams and all commercial luncheon meats. I
think it's probably the sulphites. Try buying your meats from a source known to not
use chemicals to preserve the meat. I buy meat at Wild Oats although I'm guessing
they don't have Wild Oats stores in the UK. This worked for me and now I can eat pork
products including ham without getting all stuffed up.
