Default Whipped cream. (celiac allergic)



Ok so if not being celiac is tough enough, I am also allergic to dairy and
soy. So in the article about icing for angel food cake, it mentioned whipped
cream. This is out for me. Does anyone know of any dairy free,soy free
whipped creams?

Usually butter and real whipped cream is not considered a dairy product when
it comes to nutrition or allergies (here come the flames) These products are
basically beef fat and do not contain the casein calcium and other
problems. Now if you are strongly allergic to dairy then you would be
chancing it as I am sure remnaents remain in those products also. Have you
tried real butter to see if you react to it?

Years ago I read somewhere that you can replace whipped cream with whipped
banana. I have not tried it recently but it sounds tasty. I would be tempted
to put in a dash of lemon to control the discoloration. Bon apetit.

Huh? this I do not understand. Whipped cream in my book is simply that,
cream whipped until it is thick, it has all the components of cream/milk,
though more fat. Butter basically is cream whipped until it seperates, then
the whey is discarded and the fat mixed with salt usually. Where does beef
fat come into it. Or are things so different in NZ. Yes I whip my own
cream and my mum used to make butter when I was a child and the butter
available here in NZ that is called butter is just that - butter.
There are margarines and spreads, but they are not called butter.
I found this recipe, if you change the milk to rice milk and use dairy free
marg it might work.

15g (1/2 oz) cornflour
125mls (5fl.oz) milk
40g (1˝oz) margarine or unsalted butter
3 tsp. caster sugar
1 tsp. vanilla essence

1. Blend cornflour with a little milk, heat remainder, when boiling add to
the cornflour, mix well.

2. Return to the heat, boil for two minutes.

3. Cream together margarine and sugar, gradually whisk into the cornflour
mixture.

4. Add vanilla essence. Chill

LOL

Beef fat is what butter is basically nutritionally and is usually exempt for
dairy allergies and intolerances. It lacks most of the irrritants.

I would think you could make a creamy frosting with Becel or one of the
other better margarines and a few ingredients.

Do you tolerate nuts? If so, then there might be a couple of answers.
First off, I found this link *after* I experimented in the kitchen.

I know honey gets whipped, but thought that would be pretty sweet. I
tossed some walnuts in the food processor and ground them into butter.
Had to add a bit of oil, and maybe wasn't as patient as I might have
been as the butter was still crunchy. Then sc****d the butter into a
mixing bowl, added honey and whipped it. Kept adding honey until it
was sweet enough to make a topping. It never got creamy but it is
wonderful! Especially with a dash of cinnamon. I could see this on
top of pancakes with fruit, or on a fruit dessert, or perhaps cake.

Cant remember the recipe and have just leant the book to a friend.

The Liver Cleansing Diet by Sandra Cabot
This has a NUT CREAM recipe in it.

Have tried it before (someone else made it) have not made myself.
