Default pop authentication settings

It seems I have to set identity properties "Authentication Style" to have
"Secure Sockets when Receiving" say "Never".

Is this normal when using "passwords" authentication? I don't like saying
never to secure transmissions. Is it safe/secure?

Also, can I store my passwords locally or do I need to enter each time I
start up and check mail?
