Default Moving from ISP email to Exchange

Currently on ISP-provided POP3 email. Want to put up Exchange server on
Windows Server 2003, Small Business, Premium Edition - it's bundled.

I noticed that when I set up Outlook 2002 or 2003, I get a choice of POP or
Exchange, and if I pick Exchange, it appears to look for an Exchange server
on the local network. I'd appreciate a to-do list with an order of things.
I want the users to migrate relatively seamlessly, keeping all their current
emails, etc., while moving from ISP-based to Exchanged based email. That
means the internal-hosted Exchange server will use the same name as now and
we'll just tell the ISP to point the DNS to us instead of to them.

The Exchange server lives behind a firewall with a NATted address so it will
be reachable from the outside.

Thanks in advance very much. This is my first Exchange server
install/setup.
