Default Property definitions

Property definitions has the option to define as a "multiple choice" type. In
this case is there a way to define the choices with the display and value
names.
For example the display name will be the employee's firstname and their
value name will be the employee's ID.

This is not possible. The display name applies to the property whereas the
value is one of the values for the property.
You can add additional attributes to the Propertydefinition (like
employeeid) and use it to store the employee id.
