edit files online

Hello!
I am programming a Content Managment System WITHOUT MySql.

I store in a flat file the content and I would like to modify it throught
the web, online, with forms perhaps.

The problem is how save specific data that is in middle of the file, do you
knnow what I mean? I don't know how to edit spcific content or variables of
the file.
