The print size is determined by the instructions sent to the printer, while the 72dpi is merely a resolution chosen by Photoshop to show the picture on the screen. It's a convenient compromise. If I go to Image | Size | I can change the size, but as long as I don't have 'resample' ticked, all it does is show a different area on the screen, just as changing view does. So far I can see no way in which changing the 72dpi affects the saved image. (Look at 'auto' on the resize menu and you'll find a lower resolution, and a higher one of 266 dpi.) Just tell to printer to print at 5 x 7 and you should be OK.
