Do you keep the Sabbath? (Really?) (jerusalem)

The Sabbath starts at sunset on Friday and ends sunset Saturday.
Officially that is sunset in Jerusalem.

I wonder if those who want to keep a "Jewish" Sabbath really mean it.
Especially if they are a few hours different from Israel?
