If the adaptor screws into the webcam and then the addaptor goes in the
telescope eyepiece holder, where does the actual eyepiece go?

Nowhere in that configuration.

Prime focus imaging (which is what you have described) uses no
eyepiece between the CCD chip and the main objective.

Afocal imaging is where you use an imaging device with a fixed lens
and an eyepiece. This is a typical arrangement for a fixed lens
digital camera through the scope shot.

Eyepiece projection (which is what you want by the sounds of it)
requires a special adapter that fits into the eyepiece holder of the
scope. The eyepiece fits into the adapter and the webcam (with it's
adapter thread) screws onto the end of the projection adapter. The
projection adapters cost about £40 upwards.

There are loads of books out there ans I'm sure that someone more
experienced with them will be able to guide you.

I've always found this site quite good for some basic information.
It's aimed mainly at CCD imagers but there are some nuggets of
interest for webcammers if you dig.

For specific webcam imaging advice the fount of all knowledge is of course
the Yahoo group

but you may find it rather daunting at over 100 messages a day. A better
starting point might be Jan Timmermans site which has a section aimed at
beginners and links to other useful sites
