How does low, but not freezing, temperatures kill cells & organisms?

Just curious.

Low temperatures (above freezing) do not typically kill cells and
organisms. In some instances low temperatures will inhibit or slow
further growth. That is why we refrigerate meats and dairy, but
eventually they'll go bad anyway.
