For some reason, I can't stop myself from wondering ... what would
trilobite taste like? I assume you could grill one of them up just like
most kinds of seafood, but would they taste like crawfish? mussels? Would
they be palatable at all?

AKA Morton Bay Bugs, I think.

Never tried one. I don't eat anything that has its skeleton on the
outside. They aren't noticably close to trilobites phylogenetically, I
think.

Nothing is phylogenetically close to trilobites. However I used
to dissect Horseshoe crabs to get the muscle, Actually there
isn't all that muscle worthy of eating, but I would suspect the
muscle of the trilobyte would probably taste like crab muscle.
Think Alaska King Crab which requires a pair of forceps to eat
with ;^).

BTW I beg to differ which your 'red'-chicken arugment at least
Anchovies and Armadillos don't taste like chicken ;^).

Only when they're fossilized. Caught fresh, they taste almost exactly
like Sanctacaris and can be used in the same recipes. But if you only
have access to commonly available chelicerates, you can substitute
scorpion tails in most recipes (remove the stingers).

I'm reading this in sci.anthropology.paleo, and wonder why abc
crossposted his question here. If he has a hankering for grilled
fillet of A'pith, he can forget about asking how that tastes.
Personally, I think one should avoid dining on creatures too closely
related to one's own species.
