Does there exist a game, fantasy league etc,. that allows you to pick the
players for each team from the entire history of baseball for each tean and
then play a complete game?

Strat - O - Matic possibly, but It may get expensive buying all the
roster cards.

Try whatifsports.com it's not bad. I usually play a league in the
Winter to help get me a baseball fix.

You can pick from any player in any time, set a lineup, set a rotation
and your bullpen use and let her rip. You can make changes after each
game, and you play 3 games/day.

They have forums where you can play in a theme, or you can just play
in any league. They have a try it free option, which i think plays 20
games for ya...
